Stir Fry Spaghetti - Aglio e Olio

Stir fry Spaghetti
We can use any ingredients we like.
Usually, I will only stir fry with shiitake mushroom, ham and tomato. Since I have some leftover of spinach, decided to add them in and it taste good too.

This recipe cook for 4 person.
Chop all the ingredients that I want to add
Fresh Shiitake Mushroom
Small chilli to give that punch
Garlic

Ham is quite important as it gives this dish a flavor
Capsicum is another item I must add in my spaghetti
Next - something I usually do not add, but since it taste well and it is good to have more vegetable intake, I add them in my recipe.

Depending what kind of spaghetti you use, to boil the spaghetti, add 2 teaspoon of salt into the boiling water before placing the pasta into the water to boil.
I usually use about 70 grams of pasta for 1 person.
After boiling for about 5 mins, taste test the pasta to see if it is cooked to your preference.
Once cook, drain the water into a bowl. We will use this water for frying the spaghetti later.
Next, wash the cooked pasted under ice water to give its springy feel.
 

To cook, first fry the garlic until brown and keep the oil and fried garlic aside.

Stir fry the capsicum, mushrooms one by one until brown.
Lightly boil the spinach before we start cooking the spaghetti.
Place aside.

Now the noodles.
With a little oil, fry the chilli until brown.
Add ham and stir fry until the ham is slightly brown or fragrant.
Add the water (use the water from boiling spaghetti earlier)
Taste the soup to be the saltiness we want.
Add the boiled spaghetti and stir evenly under high fire.
Once the spaghetti starts to boil, we add all the fried ingredients above and give it a stir.

Turn off the fire.
Lastly, add the fried garlic with oil and stir.
If you like the more oily Aglio Olio, we put in more oil to fry the garlic for adding it to this dish.
