Vegetarian Braised Potatoes

Braised Potatoes
I used the Japanese method of braising vegetables to prepare this dish.

Ingredients. 
  1. Potatoes - 3 big ones (Since potatoes is the main lead here)
  2. Carrot - 1 medium size
  3. Soaked mushrooms (About 6 dried mushroom soaked overnight. Sliced into halves)
  4. It is fine if you different proportion of vegetables. It all depends on which vegetables we like to eat and we just cook accordingly.
  5. Lastly and most importantly, we need the Braised Vegetables sauce. I made use of the Japanese Vegetable sauce that I pick up form internet. Check out here for the recipe.

Steps to prepare.
  1. Peel the potatoes, cut them into your preferred sizes. (I cut them into approximately 5cm x 3cm thickness. Usually I will have the potatoes cut into bigger sizes so that they will not melt away if I cook for too long. (I usually like to cook longer since I prefer soft potatoes).
  2. Peel the carrot and cut them into chunks. I like to cut half them slightly smaller than the potatoes. 
  3. Cut the stems away from the soaked mushrooms. Slice the mushrooms half. The stems can be eaten too.
  4. Sizes of the vegetables do not matter. For bigger pieces, just need to cook longer. For smaller pieces, we cook for a shorter time. 
Now the cooking by normal method.

  1. Place all vegetables into a pot.
  2. Fill water until all vegetable are almost submerged in the water.
  3. Scope the Braised Vegetables Sauce into the vegetables a tablespoon at a time. Taste to ensure you have the correct salty level. Once you are satisfied with the salty level, place the pot to boil.
  4. It takes 20 minutes to 30 minutes to cook the potatoes in slow boiling heat depending on the thickness. 
  5. To test if the potatoes are cooked, just need to poke a chopstick into the potato. If the chopstick can be poked into the potato, it is cooked. Once the potato is cooked, we may scope up the potato and carrot from the gravy. This prevent them from over cooked.
  6. It is good to braise the mushroom a little longer so that it will absorbed more of its sauce and the mushroom will turn out more flavorful. I usually braised the soaked dried mushroom for at least 45minutes so that they are soft and flavorful to eat. 
  7. For the thickness of the potato I used, it takes about  25 minutes for the potatoes to be cooked.
I cook this dish with the help of this Thermal Pot.
Just placed all vegetables into the inner pot to cook over the gas cooker at high heat.
Immediately transfer to outer pot when the vegetable boils at high temperature. (When you see the bubbles start to rise to the top of the pot - that is at the highest temperature)
Cover the outer pot and leave aside.
Vegetables will be cooked in 1 hour.
